Hello Ben,
Hint #1: turn off the headlights in the day time when conditions are good. It pisses other drivers off and uses heaps more petrol.
For having the A/C on the whole time and averaging the speeds you did I'd be happy with that for a Subaru 6 cylinder, though not that you pay for Premium fuel to do it. From experience I agree that most other 6's will get better than that on the highways.
I am relieved it is a little more than my EJ22, all up it is 10.56L/100km in the Liberty, but I don't usually drive like a grandma either. Just over 300,000km on it now (2007 scored 10.74L/100km). Consider an EJ22 swap
For comparison, a few years ago I was getting around (l/100km when cruisng at average of 100-110km/h, 12L/100km when at 130-140km/h and 14L/100km/h at 150km/h (under controlled conditions of course - I was in control).
I think the motor is getting a little tired now as I have to drive real easy to get anything sub-10.5L/100km.
The EJ25 in the RS seems really good, I cracked a 7.9L/100km which I thought was impossible for a Suby motor. It is averaging 9.11L/100km (only over 5000km), but probably has about a 3-400kg weight advantage over the H6, what does yours weight tare?
Oh, and how much pressure was in your tires?
