Yeah I remember doing those at the old pizza place. They have to manually put them through when it's back online again later. They might have forgotten or just not put it through yet.
In regards to your security, if somebody starts using your credit card number then just tell the bank immediately and they'll get their security team onto it, usually refund your money straight away too if it's not due to anything really stupid.
I wouldn't be canceling your credit card just because somebody knows the number to it. Otherwise you'd have to do this every time you read it out to somebody over the phone etc. They could always just write it down.
